MY ORIGINAL TACOS

1 pound ground beef
1 small chopped onion
1 chopped tomato
1 diced large potatoe
1 garlic clove minced
or 1 teaspoon powdered
1 teaspoon ground cumin
salt & pepper to taste
1/2 cup water
1 dozen corn tortillas
oil for frying tortillas
Fry ground beef in skillet
until brown and crumbly
Add the onion, tomato, potatoe
garlic, cumin, salt & pepper
and saute until onions are soft
and tender. Add water, bring
to a boil, cover and let
simmer until potatoes are
done.
Fry tortillas in oil, folded
in half, until golden brown.
(Leave tortillas a little
opened so you'll be able to
add the beef mixture,
without breaking the tortilla.)
Stuff each tortilla with a litte
of the meat mixture. Add shredded
lettuce, shredded chedar cheese,
chopped fresh tomato, and chili
sauce. Sour cream may be added
if desired.
My ORIGINAL Hot Taco Sauce
1 can tomatoe sauce
1/2 cup water
1/2 teaspoon dried red chili flakes
1/4 chopped onion
1 chopped fresh tomatoe
1 teaspoon cumin
1 teaspoon white vinegar
Salt and Pepper to taste
Put in frig for an hour.
This taco sauce is delicious
as a dip, also.
