Original Chili Picante Sauce
Pico Gallo

Free Mexican Recipes From Mexico
Dice 5 jalapenos (de-vein if you can't handle too hot).
Dice half of an onion, 1 large tomatoe, 1 teaspoon diced
pimento and chop up plenty of cilantro.

Put all of the above into a bowl and fill with enough cold
water to cover.

Add 1 teaspoon garlic powder, 1 bayleaf, 1/2 teaspoon
white pepper, salt to
taste, 1 tablespoon olive oil, and the juice of 1 lime.
Refrigerate for
about 1 hour, then serve with tortilla chips or as
a garnish on steak or
whatever you choose.


Mexican Cheese Dips
Chili con Queso

Dice 1 pound toasted and peeled fresh green
chili, 1 onion,
3 fresh tomatoes, 1 jalapeno and
10 large mushrooms sliched.

Saute all of the above in a little oil, add
plenty of fresh or garlic powder and salt to taste.

Add 2 can of evaporated milk, 1 can
cream of mushroom soup
and 1 pound of velveeta cheese. Simmer slowly till
smooth. Eat as a dip with chips.


Mexican Hot Chile Rice
White Rice and Green Chili

Saute 1 cup rice in margerine. DO NOT brown.
Add 2 cups water and 1 can chicken broth.
Bring to a boil and then simmer til rice is perfect.

In a pan with margerine, saute diced jalapeno, 1/4 onion,
2 tomatoes and 10 green chili.
Thickly coat a baking dish with sour cream. Add a layer
of white rice, then
a layer of sauted chili, tomatoe, onion and green
chili. Add big scoops of sour cream and
repeat. Top with grated munster
cheese and bake at 200 just until the cheese melts.


Hot Picante Sauce
Salsa Picante With Chili's Tepin

1 package chili Tepin ~ 4 bay leaves ~ 2 garlic
cloves ~ 1 cap vinager
1 tablespoon sugar ~ dash black pepper ~ 1 large
can whole tomatoes
2 tablespoons oregano ~ salt to taste
Put all of these ingredients into a blender
and blend until smooth.


Chicken Enchiladas

2 cups cooked chicken
2 cups shredded cheese
Munster, Colby or Chedder
1/2 cup chopped onion
1/2 cup pitted ripe olives
1/2 cup chopped tomatoe
1 cup shredded lettuce
1/2 cup sauted sliced mushrooms
sour cream
salt to taste
1 dozen corn tortillas
Oil

Fry corn tortillas in oil
until soft
Place tortillas in a baking dish,
adding a little shredded chicken
and onion into each tortilla
and then roll.
Pour red chili sauce all over the
top and add more onions.
Bake at 350 for about 15-20 minutes.
Take out of oven and sprinkle plenty
of cheese and bake again for about
3 or 4 minutes, until cheese melts.
When ready to serve, add sour cream,
olives, tomatoe, mushrooms and
shredded lettuce.


Beef Tacos

1 pound ground beef
1/2 onion chopped
2 garlic cloves
1 chopped tomatoe
1/2 teaspoon cumin
2 cups water
salt and pepper

Place all of the above
in a pot and bring to a boil
cover then simmer until
ground beef mixture is cooked
Drain water, leaving just a little
of it to make it juicy.

Fry 1 dozen corn tortillas
in a little oil, folded in half
until hard and crispy. Leave open
enough open space to allow you to
fill with the meat mixture.

Place a little of the meat mixture
in each tortilla.
Add sliced lettuce
grated cheese and chopped
tomatoe. Add anyone of my
salsa recipes and top with
sour cream.


Cheese Nachos With Chili

Cover large dish with corn tortilla chips
which have been covered with mashed beans.
Top with grated cheese.
Add small sliced pickled jalapeno slices on top.
Microwave until cheese has melted.
Scatter small spoonfuls of sour cream.


Eggs With Picante Chili Sauce
Huevos Rancheros

Dice 4 fresh tomatoes,
2 jalapenos and cut in
slices 1/2 large onion
and saute in a little oil. Add plenty of garlic,
1 cup water, 1 teaspoon
chicken consume or chicken broth.
Add some tortilla chips, add grated
munster cheese and stir softly.
Add 4 eggs on top, cover and simmer
til eggs are done.


Chile Chicken Soup

2 teas. vegetable oil
2 onions
4 cloves of garlic crushed
3 bacon rashers
2 teas ground cumin
6 med tomatoes peeled seeded chopped
2x 310gcans red kidney beans rinsed
and drained 1 tablespoon chopped fresh oregano
3 canned jalapeno peppers drained and chopped
1 lg red capsicum chopped
3 sticks celery chopped
1.75 litres water
1-1/2 tblspoons of chicken stock powder
500g chicken thigh fillets chopped

heat oil in pan
add onions, garlic, bacon and
cook stiring until onions are soft
add cumin, stir until fragrant, stir in
tomatoes, beans, oregano, peppers,
capsicum, celery, water and stock
powder. Simmer for 15 mins uncovered.
Add chicken simmer uncovered
for a further 10 mins.
or until chicken is tender.

Mexican Coffee
4 oz Hot Coffee
2 oz Kahlua
2 oz Heavy Cream
Serve in Irish Coffee Glass
Combine hot coffee and liquer in
an Irish Coffee Glass and stir.
Add heavy cream on top


Spanish Coffee
1/2 oz. Tia Maria, 1/2 oz. Rum,
Coffee, Whipped Cream
Build in Coffee mug
Top with Whipped cream
Garnish with a Cherry


Creamy Mexicans Mixed Drinks
6 oz Cream Soda
1.5 oz Jose Cuervo Tequila
1 Highball Glass Serving
Pour tequila over ice
and fill glass with cream soda


Mexican Hot Chocolate Mixed Drinks
1.5 oz Jose Cuervo Tequila
0.5 oz Kahlua
4 oz Hot Cocoa
2 oz cream
1 Irish Coffee Cup Serving
Pour all ingredients, except the cream
into an Irish Coffee glass. Stir well.
Add whipped cream on top.
Dust with Cocoa Powder.
