2 cups commercial eggnog
4 cups sugar
1/4 cup light corn syrup
1/4 teaspoon salt
1/4 cup butter
1 cup diced candied fruit
1 cup chopped pecans

Combine eggnog, sugar, corn syrup,
and salt in a Dutch oven; cook
over low heat, stirring frequently,
until mixture reaches soft ball stage(230).
Cool to luckwarm; add butter, and
beat until mixture is no longer shiny
(about 5 minutes). Stir in fruit and
pecans. Spread in a buttered 8 inch
square pan. Cool and cut into squares.


Eggnog Cocktails

30ml Brandy
30ml Dark Rum
1 Egg White
1 Teaspoon sugar
Milk
Shake all ingredients (except Milk) with ice
Strain into a Rocks glass, top up with Milk
Garnish with a sprinkle of nutmeg


EggNog
Fresh Eggs Only
12 Eggs
3 pints Heavy Cream
1 cup granulated Sugar
Grated Nutmeg
1 cup Bourbon
1 cup Cognac
1/2 tsp Salt
Beat yolks until light in color. Slowly add
bourbon, cognac, while beating at slow speed.
Chill 3 hrs. Add salt to whites, beat to peaks.
Whip s cream until stiff. Fold whipped cream
into yolk mixture, then fold in the beaten
egg whites. Chill one hour. Serve with nutmeg
sprinkled on top. For thinner mixture add
1 or 2 cups of milk. Serve in a punch bowl
or another big bowl.


Waldorf-Astoria Eggnog

2 Egg Yolks
1/4 oz Cream
1/2 oz Sugar Syrup
Nutmeg
3/4 oz Tawny Port
1 1/2 oz Bourbon
3 1/2 oz Milk
Shake well over ice cubes in a shaker and
strain into a large highball glass over
ice cubes. Sprinkle with nutmeg.


Creamy Milk Punch

1 pint vanilla ice cream
2 cups half and half or milk
1/4 cup bourbon
2 tablespoons sugar
1/4 teaspoon vanilla extract
Freshly grated nutmeg

Combine ice cream, half and half,
bourbon, sugar, and vanilla in
container of an electric blender;
cover and mix til smooth.
Pour into punch cups, and sprinkle
with nutmeg and serve immediately.
Makes 1 quart

Blend in Holiday Cheer,
Peace on Earth,
Christmas Spirit and the Good Will toward Men.
Use the mixture to fill a large,
warm heart, where it can be stored
for a lifetime. (It never goes bad!) Serve as desired under mistletoe,
sprinkled liberally with special Christmas Snowflakes.
It is especially good when accompanied by
Christmas Carols and family get-togethers.
Serve to one and all.
